Cabbage

Cabbage is a wonder vegetable trumpeted for its weight-loss capabilities because it is extremely filling and nutritious. Red cabbage especially is a wonderful source of dietary fibers, potassium, manganese, and vitamins A, C, K, and B6. Cabbage is highly nutritionally balanced and contains a substantial number of essential amino acids. Studies have even shown that eating vegetables like cabbage and brussel sprouts (in conjunction with tradition treatment) can promote cancer cell death.

In shopping for cabbage choose brightly colored, firm, and dense heads. Look for leaves that are crisp and unblemished, but you can always peel off blemished outer leaves.
