Spinach

Spinach is unique because of its high concentrations of pigment molecules, called flavonoids and carotenoids. These molecules have proven to have strong anti-cancer and anti-inflammatory benefits. Furthermore spinach is rich with antioxidants, which yield lower risks of heart and neurological diseases. Spinach provides 200% of your daily vitamin K, as well as high levels of zinc, vitamin C, iron, calcium, and manganese. All this nutrition packed into such a light, delicious veggie is shown to aid eyesight, lower blood pressure, improve skin, and prevent age related diseases such as cataract development.

When shopping for spinach, choose bunches with dark green leaves. Try not to buy spinach with leaves that are too wilted, torn, or blemished.
