Tomatoes

Many don’t realize that the tomato is nutritiously comparably to the apple. In fact, the antioxidants in tomatoes aid in cancer prevention, and are necessary components to good vision. Tomatoes contain high levels of nutrients and minerals—such as dietary fiber, potassium, manganese, and vitamins A, C, and K. Furthermore, the tomato has a strong amino acids score, meaning that the vegetable contains many of the essential amino acids our own bodies can’t produce. However most of the calories in tomatoes, though few at that, derive from sugars. 

For the best tomatoes, choose those that have bright color (red, orange, or yellow depending on the type you are buying) and smooth skin. Avoid tomatoes that are wrinkled or discolored. Store tomatoes at room temperature until ripe, by which time you can store them in the fridge.
