Carrots

Carrots are known, beacuase of their high concentration of vitamin A, as the vegetable that keeps your eyesight sharp and healthy. But the carrot has plenty of other healthy benefits as well. The pigmetns (carotenoids) in carrots are powerful agents in cancer and cardiovascular disease prevention. A regular diet of carotenoids i has been linked to up to 20% decreases in postmenopausal breast cancer and up to 50% decrease in cancers of the bladder, cervix, larynx, esophagus, prostate, and colon. Furthermore, carrots are high in dietary fiber,  potassium, and vitamins C and K.

In buying carrots, choose those that are firm and bright in color. Store carrots in the crisper section of your fridge and minimize their water loss by placing them in a plastic bag.
