Collard Greens

The toughness of collard greens or kale, while it means more cooking time, is the result of these greens’ high levels of protein and dietary fiber. Collards are also a great source of riboflavin, folate, iron, manganese, and vitamins A, C, K, and B6. Collards have strong anti-cancer properties through its detoxifying effects, antioxidant properties, and by promoting our immune systems. Furthermore, these properties translate to lowering cholesterol and promoting a healthy cardiovascular system. Choose collards that have hardy, vibrant leaves with as few blemishes or discolorations as possible.
