Cucumbers

Raw cucumbers are extremely low in calories and entirely fat free, making cucumbers a filling and fibrous addition to many vegetable dishes. Whether tossed into salads or sliced on sandwiches, cucumbers add a nutritious crunch to a great variety of dishes. Though mostly water, cucumbers are also a great source of vitamin C, vitamin K magnesium, and Potassium. Whenever possible, eat cucumbers unpeeled because their skins have beneficial effects on your skin. Be sure to buy cucumbers that are firm and bright in color.
