Description

A summer delight

Ingredients

4 tomatoes (large, sliced)
1lbmozzarella cheese (fresh, sliced)
10 basil (leaves, thinly sliced)
4Tolive oil
  balsamic vinegar (to taste or 1/2 cup if reducing)
  salt and pepper (to taste)

Notes

 Cut tomatoes into wedges and mozzarella into slices and then quarter the slices. Toss tomatoes, mozzarella, basil, olive oil, salt and pepper in a large bowl.
You can add the balsamic as well, or you can reduce the balsamic in a pan on the stove first. To do this, pour balsamic into a skillet and cook on the stove over medium heat until it begins to bubble. As soon as it is bubbling, reduce heat to low and let vinegar cook down to half original amount, ¼ cup. The balsamic should thicken and sweeten. Once halved, drizzle vinegar over the salad and serve.
