Mediterranean Broccoli Salad

Ingredients
| 1 | lb | brocoli (florets) |
| 1⁄2 | c | water |
| 2 | T | butter |
| 1⁄3 | c | sun dried tomatoes (sliced in strips) |
| 2 | garlic (cloves, minced) | |
| 1⁄4 | c | pine nuts |
| 1⁄3 | c | feta cheese |
Instructions
Notes
Place broccoli florets and 2 tablespoons butter in a deep skillet on the stove top and then fill pan with about a ½ cup water. Turn heat to medium high and steam broccoli, covered, for about 10 minutes, stirring occasionally. Add more water if need be.
Meanwhile, mix feta, sun dried tomatoes, garlic, and pine nuts in a large bowl. Once broccoli is cooked to desired tenderness, strain in a colander and immediately add the florets to the large bowl and toss to mix all ingredients well. Serve salad hot or room temperature.
