Description

  CSA Member Beverly Allyn brought these delicious muffins with zucchini and blueberries to a recent Saturday harvest crew gathering.  Here's the recipe!

Ingredients

1 1⁄2cflour
3⁄4csugar
1⁄2tbaking soda
1⁄4tbaking power
1⁄2tsalt
1⁄2tcinnamon
1⁄2cvegetable oil
2 eggs
2tvanilla
1 1⁄2czucchini (shredded (one medium sized))
1cwalnuts
1⁄2cblueberries

Instructions

 Mix wet and dry ingredients separately, then add them together. Gently mix in zucchini, then nuts and blueberries. Pour into muffin pan. Bake at 350 degrees for about ½ hour until brown on top and toothpick tester comes out dry.
