Description

An authentic, refreshing take on the modern Caesar Salad

Ingredients

2clvgarlic (very finely mashed into a paste with 1/4 teaspoon coarse salt)
2tlemon zest (finely grated)
2Tlemon juice (fresh)
1Tred wine vinegar
1Tdijon mustard
1⁄2colive oil
  black pepper (freshly ground to taste)
3 lettuce (hearts lettuce, leaves separated and rinsed)
1 egg (boiled for one minute)
3Tparmesan cheese (freshly grated )
2ccroutons (homemade or store-bought)

Instructions

Combine garlic, anchovies, lemon zest and juice, vinegar and mustard. Whisking constantly, drizzle in olive oil until thickened. Season with pepper. Reserve. Before serving, place the lettuce leaves in a large salad bowl. Toss with 1/3 cup of the dressing to coat. Break the egg into the salad. Sprinkle with cheese and croutons and toss well.
