Traditional Caesar Salad

Description
An authentic, refreshing take on the modern Caesar Salad
Ingredients
| 2 | clv | garlic (very finely mashed into a paste with 1/4 teaspoon coarse salt) |
| 2 | t | lemon zest (finely grated) |
| 2 | T | lemon juice (fresh) |
| 1 | T | red wine vinegar |
| 1 | T | dijon mustard |
| 1⁄2 | c | olive oil |
| black pepper (freshly ground to taste) | ||
| 3 | lettuce (hearts lettuce, leaves separated and rinsed) | |
| 1 | egg (boiled for one minute) | |
| 3 | T | parmesan cheese (freshly grated ) |
| 2 | c | croutons (homemade or store-bought) |
Instructions
Combine garlic, anchovies, lemon zest and juice, vinegar and mustard. Whisking constantly, drizzle in olive oil until thickened. Season with pepper. Reserve. Before serving, place the lettuce leaves in a large salad bowl. Toss with 1/3 cup of the dressing to coat. Break the egg into the salad. Sprinkle with cheese and croutons and toss well.
